Creamy Avocado and Cabbage Slaw




INGREDIENTS:


4 cups finely shredded purple cabbage

1-2 cups shredded carrot

1 large avocado, pit removed and diced

6 tbsp cilantro, chopped

¼ cup scallions, chopped

1 lime--juiced

Pinch of Pink Salt (optional—I never use)


· I use a pestle and mortar, but mash the avocado (and salt if adding). Then add the lime juice to the mashed avocado

· Mix all the ingredients together


Goes great as a topping (and side!) for the black bean burgers!
