ARMENIAN RED CABBAGE & CARROT SALAD


Armenian Red Cabbage and Carrot Salad

This is one of my favorite salads! The combination of spices in the dressing with the chopped veggies has catapulted this salad to one of my top five salads to munch on for a meal. It's easy to put together and being part Armenian, I'm always thrilled to eat these types of salads which are simple and healthy yet delicious. Cabbage is excellent for promoting weight loss--your liver will thank you.


INGREDIENTS (preferably organic):

1 small head of red cabbage thinly sliced

2 big carrots grated

2 green onions finely chopped

1/4 cup small white onion finely sliced

2 tbsp chopped flat parsley


DRESSING (preferably organic):

1/4 cup lemon juice

option: 1-2 tbsp olive oil (omit if eating fat-free) **I don't use oil on my salads

1 tsp British Curry

1/2 tsp garlic powder

Add all the chopped ingredients in a large salad bowl.

Mix the dressing ingredients together separately.

Add dressing to the salad and toss.

OPTION: You can always add lettuce or spinach greens, but I usually get a big dose of that in another salad.

Lasts for days!

I'm not a big curry fan, but I love the organic British Curry I use for this. Nice combination!
